    Ingredients:

    • 3 cups chopped peeled apples
    • 2 cups sugar
    • 1/2 cup apple juice
    • 3 eggs
    • 3/4 cup vegetable oil
    • 1 1/2 teaspoons vanilla
    • 3 cups flour
    • 2 teaspoons cinnamon
    • 1 teaspoon allspice
    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • 2 cups chopped pecans
    • 8 ounces candied red cherries, chopped
    • 8 ounces green glazed cherries, chopped
    • 8 ounces candied pineapple, chopped

    Directions:

      In lg bowl, mix apples, sugar and apple juice.

      Let stand 10 minutes.

      In sm bowl, mix eggs, oil, and vanilla.

      Add to apples; mix well.

      Combine flour, cinnamon, allspice, baking soda and salt.

      Add to apples; mix well.

      Fold in pecans, and fruit.

      Line 3 loaf pans with waxed paper; grease the paper.

      Pour batter into pans.

      Bake at 350* for 1 hour, or until cakes test done.

      Cool in pans for 10 minutes; turn out and cool on wire racks.

      This was excellant. I substituted figs and dates for half of the apples, left out the pecans and used candied fruit mix with citron in it instead of just sticking with the cherries and pineapple. Oh and I substituted allspice, cloves and nutmeg for the cinnamong. It came out very moist. I let it sit for two weeks in Christmas Mix since my family likes it alchoholic. I left one of the cakes out of the alchohol and just wrapped really good. Both were great and everyone loved it. This only made two cakes for me though and I used standard loaf size pans. Still great.
