I was so happy to run across this. I made cobblers using this technique years ago but couldn't remember the recipe. To ease my conscience should I eat the whole thing, ;-) I used 1/2 cup of Splenda Baking Blend instead of the sugar and fat-free milk. To complement my fruit combo of blueberries and mango, I grated some nutmeg and lemon zest into the batter. Perhaps because I did use frozen fruit, my bake time was longer - about 40 minutes. It smelled wonderful when baking and tastes just super. Thanks for posting! I won't lose this recipe again.

Directions

  1. Melt butter in 8x8 baking dish.
  2. Add fruit to dish.
  3. Combine flour, baking powder, sugar and milk.
  4. Pour over fruit.
  5. Bake at 325° for 30 minutes.
  6. May be served warm or cold.
