This is a very simple, easy recipe my mom used to make for us frequently. There were never any leftovers.

Ingredients Nutrition

  • 1 egg
  • 1 cup milk
  • 1 cup flour
  • 1 cup shredded cheese
  • 1 cup frozen mixed vegetables or 1 cup drained canned vegetables
  • oil, to cover bottom of pan

Directions

  1. Pour enough oil into 9" x 9" (to double recipe use a 9" x 13") pan to cover the bottom with a thin layer.
  2. Preheat oven to 375°F with oiled pan inside the oven.
  3. Mix the egg and milk together, then add the flour, cheese, and vegetables in order. Vegetables last.
  4. Mix well.
  5. Once the oil in the pan is hot, pour the batter in, and bake at 375°F for 35-40 minutes.
  6. It may need some more time depending on your oven, check for a crispy golden brown color across the top.
  7. Enjoy.
