I love, love, love this orginal idea!! My only gripe about the recipe was all of the added fat from the butter and oil. I followed the potato/onion prep, but I made some adjustments on the fats. I rubbed the entire skin of the potato with my favorite EVOO before slicing. Then, I dotted a tiny bit of unsalted Irish butter between each slit for flavor (1 tsp total). After folding the foil packet I poured in 1 T of my favorite chicken stock and sealed the packet. Great flavor for more than half of the fat & calories!

Forgo the Foil - don't steam the skin
I have found that the secret is to make them like my Pops used to.
poke the tate in spots -- rub the outside with white bacon drippins and salt w/ coarse kosher or sea salt.
Best tasting potato anywhere, including the best steakhouses.
This is a great recipe for a simple baked potato with a lot of flavor! My family loved them! Thanks for sharing

5 star all the way Derf. Great tasting and easy to prepare. I opened up the foil for the last 15 minutes to allow them to brown a bit. Took exactly 1 hour. Served with Mexican meatloaf, new carrots & fresh beans. Delish dinner

I've been makin these types of potatoes for years, we add green peppers in addition to the onion. Delicious!

Fantastic alternative to all the high-cal butter and sour cream. Plus, my family loved having their own little "treasure pouches" to open. Next time I will experiment with various spices. Thank you!

We love these potatoes. I make mine with celery salt, garlic salt and a dash or two of worshtershire sauce and a dab of butter on top before rolling up the foil. Of course, I use the onion, too. We have never had a problem of not having flavor like one reviewer said.

These are great bbq potatoes! It took a little longer than I thought to prepare, but they were well worth it. Very soft and tasty when finished, and the onion (I used a sweet yellow) added a great flavor.

I thought this potato was great. I added a baked potato mix to my butter that I put in the potatoes. I also melted that same butter and pour it over the potato after it was done. Ump Ump Ump When served we had a side or sour cream to dip or baste each piece o the potato with. Delicious.

I've been making taters kinda like this for years. Did them in the oven tonight & had them with some fried chicken. I added some cut-up bacon instead of olive oil &/or butter....pretty tasty. THANKS!!!

A nice variation on your standard foil wrapped potato. I used russett potatoes and red onion. The onion really shrinks down, so next time I'll really shove more in there. I also sprinkled some Mrs. Dash and could have used more. Garlic would be a nice addition. Served right in the foil with sour cream. Delicious!

Your description says it all - quick, easy & delicious! I used a very large russet potato and a Vidalia onion .......... along with sea salt & freshly ground pepper, I added a generoush shaking of Mrs. Dash seasoning. Thanx Dorothy!

Made these using Yukon Gold and Spanish onions fresh from the garden - there is nothing like the taste of garden fresh potatoes! They were as good as I expected them to be with the wonderful taste of summer that garden potatoes have. A wonderful summer treat - which are on for a a repeat this weekend, this time using one of the lush Gems. Fully expect them to be another the family and I will love!

Just loved these potatoes!!! Great for a hot summer night not to heat the oven/house up. I liked the onion flavor to the potatoes. I used large red skins and just added some butter to them. Yummy!!! Thanks Derf for a great recipe!!
