Wow - loved this fish! The spinach goes well with the fish and the crackers, wheat germ and parmeson make a great topping. The cook time is right on resulting in moist flakey fish. Thanks for posting this great recipe!

  1. Preheat oven to 400°F.
  2. Thaw fish, if frozen.
  3. Place fish fillets in a single layer in a 12 x 7 1/2 x 2-inch baking dish.
  4. Spoon souffle on top.
  5. Combine crushed crackers, wheat germ, and Parmesan cheese; sprinkle over all.
  6. Bake, uncovered, for 15-20 minutes or until fish flakes easily when tested with a fork.
  7. Garnish with lemon wedges, if desired.
