Easy Fish Chowder N' Rice

Something quick and easy for a cold fall or winter night after work

  1. Cut cod filet into 1" cubes.
  2. Heat butter in dutch oven or stock pot. Saute green pepper, celery and onion until soft, 3-5 minutes.
  3. Add parsley, diced tomatoes and tomato sauce.
  4. Start rice cooking. While rice is cooking add cod to sauce and simmer. Salt and Pepper to taste.
  5. Serve over cooked rice.

I loved this! I used tilapia and brown rice because it's what I had on hand, and it turned out fantastic - not too fishy.
