Easy Fish Bake

"I like things easy so the name of this recipe appealed to me. The recipe comes from Campbells and calls for their Cream of Shrimp Soup which can be difficult to find. I can usually find it at the Wal-Mart stores with groceries, however. Wherever you do come across it, keep this recipe in mind. It really IS easy and tasty, too."

  • 1 (10 3/4 ounce) can condensed cream of shrimp soup
  • 34 cup water
  • 2 teaspoons lemon pepper seasoning
  • 1 (10 ounce) package frozen peas and carrots, thawed
  • 1 12 cups uncooked instant rice
  • 1 lb fresh white fish fillet, 1/2-inch thick (cod, haddock, halibut, tilapia)

  • Preheat oven to 375 degrees F.
  • Mix soup, water,1 teaspoon of lemon pepper, carrots, peas, and rice in a shallow 2-quart baking dish.
  • Top with fish, cutting to fit. Sprinkle fish with remaining lemon pepper.
  • Bake in preheated oven for 25 minutes or until fish flakes easily when tested with a fork.
