Easy Egg Salad

"This is a basic egg salad I've made for years. I like it just as it is, but you can customize it by adding in chopped onion, tomatoes, relish or whatever you like."

  1. Good basic salad, I like to add horseradish to taste. If your eggs are very fresh, try steaming them instead of boiling, shells will slip right off, plenty off directions on the web, do a search

  2. Great recipe. My hint: If u have a poached egg cooker, use it instead of peeling egg shells.

  3. Thank you so much. 1st timer. Recipe so simple and easy to assemble. I used free range organic eggs. I added sweet pickles and used spicy Dijon and specked with tobacco sauce. Instead of bread served it in spinach wrap and multigrain wrap.

  4. Added dill pickle relish and a small squirt of balsamic vinegar. Something about a little kick of sweet with sour and eggs made it super tasty.

  5. Love egg salad! I love mayo in deviled eggs, egg salad and potato salad. Do not like Miracle Whip. My husband is a Miracle Whip lover and I tried to like it, but it changes all the dishes to bitter instead of sweet. I will stick with mayo in all these items. This is a great egg salad! Hellmann's is the best mayo out of all that I have tried! Love the sweet flavor! Thanks for a great recipe!

Tweaks

  1. OK, I received a "ProTip" a short while ago that I'm going to share here. Keep in mind that the time spent cooking the eggs are diffferent depending on your altitude but.... Place a steamer basket in a large pot and fill with water to just below the basket. Bring to a boil. Once a boil has started, put your eggs in the basket (be careful, you don't want a steam burn). Put the lid back on and continue to cook for 15 minutes. Once done, immerse the eggs in an ice bath and cool. You will have the most perfect hard boiled eggs and they will be INCREDIBLY EASY to peel! Give it a shot!

  2. Added 2 tablespoons of green onion and 1/4 teaspoon of paprika.

  3. I used Maille Old Style Whole Grain Dijon Mustard instead and added chives.

  4. I added garlic powder and italtian seasoning and oregano

  5. I'm on a ketogenic diet, so to have a little sweet, but not the sugar. I added dill pickle and stevia glycerite, just a couple drops to this. The combo of dill and sweet is so yummy!
