WOW, what an easy and delicious meal! Loved these crunchy taters! They were so yummy and I will certainly make them again! I think these would be great with a mexican seasoning and some guacamole or Italian herbs and a cream cheese dip. Mmm, so many possibilities!
I used no sugar added whole spelt flakes and that added a nutty crunch to the taters, which we all enjoyed. I needed to cover my fries after 20 minutes as the flakes were browning a bit too much, but other than that your directions were spot on.
THANK YOU SO MUCH for sharing this wonderful recipe with us, Lori! Made and reviewed for Everyday Is A Holiday Tag Game January 2011.
These are very easy to whip up. I used the rice krispies and crunched them up in a plastic baggie, then added the potatoes several at a time and shook them until they were coated. Mine were done just right at the end of 40 minutes.

These are really good, and best part 4yr DS has 2 servings (and he does NOT eat potatoes!!) Made as directed using Rice Krispie crumbs that I pulsed in the food processor. Will be making more often since DS ate them!! Made for Everyday Holiday.

These were good; at another review's suggestion, I added some seasoning to the breadcrumbs, and you can really suit your own taste. The potatoes were crispy and soft at the same time; they were really enjoyed and will be made again. Thanks, Lori Mama, for sharing this yummy potato recipe.

This got mixed reviews at my table. My husband loved them, I thought they were okay, and my son wouldn't eat them. It may be a texture thing since we have never eaten potatoes quite like this before. I think some extra spices in this would go a long way if I were to make again.

These are so good! Love the crunchy outside and the soft baked inside! We love cornflake crusted anything so knew these would be great! I made them as a side to go along with Donna's Seasoned Hamburger Patties and it was a great combo! Thanks for sharing :)

LOVELY. I cut my potatoes into huge chunks and used Russet potatoes. I added a bit of fiber one to the cornflakes when I ground them in my blender so i had fine crumbs and chunkier bits . very nice. I did half the recipe as stated and then added a bit of cajun spice to the remaining crumbs both ways were awesome and we did not find the "plain"one bland at all . And I didn't use salt since I have to watch my intake. The cereal even though it is relativley plain adds a wonderful sweetness. We had these with a very spicy pork dish so the "plainess" went great. Now if we were to have these with a plain steamed fish then I would probably add some variety of seasonings. I LOVE a side dish like this where you can have as is or tweak to suit the rest of the meal. The inside was so moist and tender YUM. I did have butter leftover but then I didn't measure it and just sprinkled some over the top. Definite keeper and will be going into my Divine Recipes of 2009 cookbook. Thanks LoriMama for posting. Thjese were nice for something different, I also added some Italian seasoning to mine to go along with some Italian meatloaf, I especially liked the crispy bits that fell off the wedges onto the bottom of the pan..Mmmm!

I made the recipe just as stated except I added some parsley for color. I thought they tasted pretty good but I will spice them up a bit next time.

I used Rice Krispies. 40 minutes and it was ready. I used vegetable oil. Maybe some spices were missing like chili powder or even greek spices :P I'll experiment next time. Maybe season the oil before rolling the potatoes. Thanks Lori :) Made for Holiday Tag. Edit : this time we used butter, it makes all the difference. And the first time I forgot to crush the rice krispies.

These were great! I used seasoned salt for the regular salt and added some garlic, Parmesan and parsley to the cornflake blend. I ended up cooking them an hour at 350 degrees as it was the temp my meatloaf needed to bake at. They were crunchy on the outside and soft on the inside. The crust was very flavorful. The entire family enjoyed them immensely. A sure fire repeat.

These were really easy to make, and even my picky 3 year old tried them and ate more than a bite! I used the cornflake crumbs. The crunchy cornflake coating over the tender potato was very nice, but even with some salt they were rather bland. We will definitely make them again, but I want to do something to punch up the flavor a bit.

Very nice and easy recipe to make. I, too, liked the crispy outside and tender inside. Cooked these along side roasted cauliflower for a couple great veggie sides. Thanks for the post Lori
