      Simmer onion, carrot and celery in water for 10 minutes or until vegetables are tender. In a blender or food processor; puree all vegetables. Add salt, pepper, chicken broth and cream. Heat before serving, but do not boil.

      Really nice soup which I made for a quick and easy tea last night for my kids. I substitued frozen chopped veg for the fresh veg which, not only made it so much easier (no chopping) but it didn't compromise on the taste. The frozen veg included chopped carrot so the only chopping was the onion and celery. I didn't have half & half so I substituted half the amount of coffee creamer mixed with 1/2 cup water. Lovely!

      This soup is wonderful. It uses simple engredients that are usually in the pantry and has the versatility to use any veggies you have on hand. I used raw cauliflower which I cooked along with the rest of the ingredients. I used an immersion blender to partially blend the soup. Thankyou for posting. This is going into my favourites cookbook.

      This is super dooper easy and great tasting! My daughter loves it. I used cauliflower for the 2 c of veg. just threw it in and used pork broth instead of chicken. It was gooood! Didnt even puree it. thanks
