Easy Corn Fritters

I haven't had these corn fritters in years, and made my mom's recipe tonight. They are super easy and really tasty. They basically taste like pancakes with corn in them. I think they would be a great way to sneak some veggies into your pickier eaters diet.

  1. Thaw frozen corn by placing it in a strainer in the sink and run cold water over it, stirring occasionally, until it is completely thawed.
  2. While corn is thawing, mix all of the remaining ingredients except oil in a large bowl.
  3. Add thawed corn to batter and mix well.
  4. Heat oil in a large non-stick skillet on medium-high.
  5. Drop spoonfuls of batter into skillet. Brown on both sides.
  6. Drain on paper towels before serving.

My Mother always made these when i was young for breakfast.. I Loved them with Strawberry Jelly on top... Yummy with maple syrup or jelly. I still make them often.

My mother used to make corn fritters all the time and all 5 of us kids absolutely loved them. I remember my mom's fritter batter to be runny, making thin fritters. This recipe is considerably thicker and makes more hearty fritters, and the taste is just exactly how I remember them. Excellent recipe.

These corn fritters have a really nice consistency, more like a pancake. I tried them two ways. The first time I put everything in the blender to cream the corn. The second time I folded in the corn last. My family seems to prefer the pieces of corn in them.
