Crispy Coconut Pie

"I received this recipe from a really good friend of mine. She is a Cancer Survivor and gave me this recipe to put into a cookbook that we printed to raise money for The American Cancer Society. It is really quick and easy and OOOOHHHHH SOOOOOOO GOOOOOOOOD!!!!!!"

  • Mix all ingredients well.
  • Pour into pie shell.
  • Bake@ 350 degrees F for 50 minutes or until golden brown and set.
  • I use the flour to assure that the pie sets good, but it is not required.

  1. If you're a coconut lover, this is absolutely wonderful! It was sooo easy to make. I followed the recipe exactly using unsweetened coconut and it was just perfect. I didn't think the pie was too shallow. It may be because I used extra large eggs. I wish I could have taken a picture of the whole pie because it really was picture perfect! Thanks Jellyqueen!
     
  2. This recipe i so easy and fun to make with the kids. I just tried it two weeks ago for the first time and I have already made 5 pies since and given it to several family members. This is going to be a quick and great dessert for the upcoming holidays. Julie
     
  3. I was looking for a coconut pie recipe that would rival my boyfriend's aunt's and was pleased that this pie came together so easily! It really does make a shallow pie though, so I added an extra egg and increased the other ingredients accordingly. I added about 1/3c extra coconut, 1/2tsp more vanilla, 1/4tsp more butter, and just a splash of buttermilk. I also used wheat flour, and the original amount of sugar. The boyfriend AND his roommates loved it!
     
  4. Easy it is, but tasty as well. Nice custardy flavor. Mine was perfectly baked at 50 minutes, and I did use the flour. Thanks for posting!
