      Absolutely delish! I covered mine with piped chocolate and that added a needed chocolate fix I had a craving for, but the cookies were fantastic on their own! I absolutely loved these, and they're now a family favorite; even among my boyfriend, who doesn't really like coconut! Thanks for a keeper :)

      I made a few substitutes, doubling the cookies and using 1/2 cup brown sugar in place of 1/2 sugar; added 1/4 teas coconut extract and also some toasted almonds and chocolate chips. These came out amazing and tasted just like chocolate covered macaroon! YuM!

      Five stars from my coconut loving daughter! She asked for a coconut cookie but she wanted to really taste the coconut, not just have it as part of the flavors. This is it!

      Great cookies. I used air bake cookie sheets and baked for 12 minutes. They were a lovely golden brown. But, the next time I make them, I will mix the coconut in by hand. I use a hand mixer and low speed was not strong enough and med. speed through the dough all over the cabinet. However, live and learn. My DH has been on a trip and these will be his welcome home for he loves coconut. Don't we all?

      These were awesome and I definitely love coconut. Used fresh coconut and sugar instead of the sweetened flaked coconut as could not find it. DS and DH loved them too. Will be making them again. Thanks for a keeper. :) Fay

      This is a 5 star all the way. It has to be one of the easiest cookie recipes I have ever made and they make a very pretty cookie. DH has requested this one to be made often. I made exactly as directed, no changes what so ever.
