So good and very simple to make. I couldn't find the chocolate crust, so I used regular graham cracker crust instead. This recipe is a keeper!

  1. Preheat oven to 350F degrees.
  2. With mixer, beat cream cheese until fluffy, gradually beat in sweetened condensed milk until smooth.
  3. Add egg, lemon juice and vanilla, mix well.
  4. Arrange raspberries on bottom of crust.
  5. Slowly pour cheese mixture over fruit.
  6. Bake 30-35 minutes until center is almost set, cool.
  7. Top cheesecake with chocolate glaze (follows) and chill.
  8. Glaze-----------.
  9. In a small saucepan over low heat, melt 2 oz of semi-sweet baking chocolate with 1/4 cup whipping cream.
  10. Cook and stir until thickened and smooth, remove from heat.
