  • Grease an 8 x 8 pan.
  • Mix oats, boiling water, and butter.
  • Let cool.
  • Beat sugar, eggs and vanilla.
  • Add cooled oat mixture to sugar/egg mixture.
  • Sift the dry ingredients together.
  • Add to the wet mixture and mix well.
  • Spread into the prepared pan.
  • Bake at 350 for 40 minutes.

  1. I have done so many things with this recipe and whatever I try, it always come out great.. I always use applesauce instead of butter (lo fat version), sometimes add cinnamon with the coco, have added peanutbutter but it was what I did the other day that got me excited~ I wanted a small carrot cake and I thought about this and knew it would work.. Same exact recipe with applesauce in place of butter (used butter nut flavoring), left out the cocoa and added about 3/4 cup shredded carrots and 2 teaspoons cinnamon.. OMG! TRY THAT! The applesauce moistens the cake more and more and it only gets better as the days go by rather you make the chocolate cake or carot cake.. This is my favorite all time recipe..
     
  2. Yummy. I halved the recipe just to make several cupcakes for my best friend's birthday. I added chocolate chips and frosted with whipped milk chocolate frosting (out of a jar because I was running out of time).

  1. Fast, easy and delicious ! Replaced the butter for unsweetened Greek yogurt and regular flour with integral wheat flour, worked great and tasted even better !!!
     
  2. This is a really nice snack cake. I wasn't sure about the texture at first, but then it grew on me. It is better the next day. I loved that it didn't taste overly sweet. I'm surprised because it seems like lots of sugar for such a small cake. Next time, I think I'll try Ex Tow Boat Cook's suggestion to substitute applesauce for some of the butter, maybe 50/50. Thanks for posting the recipe, I'll be making it again.
