Easy Chocolate Chip Shortbread

"Easy and quick not to mention delicious! I needed to make a lot of cookies in a short amount of time for a local bake sale. I found this recipe in my grandmother's recipe box. So simple but so good. You can make dough ahead of time and freeze it. Defrost when ready to use and follow baking instructions. Great cookie for the holidays."

  • 1. Preheat oven to 300 degrees F (150 degrees C).
  • 2. Sift together flour, baking powder and salt, set aside. In medium bowl
  • cream butter and sugar together with wooden spoon.
  • 3. Add chocolate chips and nuts to butter/sugar mix and stir together.
  • 4. Stir in dry ingredients - works best if you mix together with your hands.
  • Roll dough into walnut size balls. Flatten cookies slightly with the.
  • palm of your hand and place on cookie sheet.
  • 5. Bake for 15 to 20 minutes (17 minute in my oven) until light golden
  • brown around edges. Cookies will be soft in the middle but will firm up
  • as they cool.
  • 6. Leave on cookie sheet for a couple minutes to let them firm up then
  • cool on racks. Makes 2 dozen cookies.
