Where do I come when I have extra chili leftover? Where do I come when the guacamole is sitting around? Where do I go with a bunch of tortilla chips knocking on the inside of the cupboard, whispering "Did you forget about us sitting here from last week unopened and unloved"? The cheddar cheese and sour cream are doing their own sing-a-long in the fridge and all the ingredients are begging to be thrown together and here I am without a good recipe. :) Well no more I tell you. This is a great little recipe, sometimes the simplest is certainly the best isn't it? Just for the fun of it all, I threw the end-of-harvest tomato, (which was quite lonely sitting in the garden when all the other vegetables were safely tucked away from the cold) and that little jalapeno holding onto the plant leaf begging to be used too. The low-fat sour cream is a *MUST* and you will feel so good you got all these nifty ingredients together as you sit and while away the pleasure of it all on a fall Sunday afternoon. I love these nachos!! It's the only way I've been making them for a few years now. Also very good with turkey or vegan chili, low fat cheese and slow fat sour cream. ;~))

Super simple. Easy and fast. Fun and delicious. A great little snack to have on hand for guests or just the family. The OVEN BAKING is the key. It makes it taste restaurant quality. Thanks for posting Kittencal! Made just cause and glad we I did. Enjoy !ChefDLH

I tried a new chili recipe and no one except DH liked it. So I have a huge pot of chili that no one wanted to eat. I made a small plate of nachos (leaving the guac off because I didn't have any on hand and I don't really care for it) It made my chili taste not so bad after all. I really hate to waste anything, and thanks to you, the chili won't have to go in the trash after all!

Super nachos! Yummy with just chili and cheese or fully loaded! I used canned chili with beans and stirred about 1/2 lb browned hamburger into it with a little salt and pepper. Next time I will spread them out in a single layer in a larger pan to keep the layers from sticking together. I garnished with what I had on hand..sour cream, jalapenos, tomato, and green onions. Made a super Super Bowl dish for us!

Simple yet tasted SO good! I follwed the ingredients in the recipe exactly using some chili that was left over from the night before. We will definitely make this one again! Great way to use up leftover chili.

This was good and easy to make. My kids really enjoyed them. I followed the recipe as written other then I didn't add guacamole (as my family doesn't like it) and I used mexican blend cheese as I thought I had cheddar but I didn't. This was a nice, quick appetizer to make.

Wonderful! I used 1 can of hot chili and one can of mild chili and a Mexican cheese blend. Served these to family members who were here for the day and this was devoured immediately. You've done it once again Carol. Thanks for sharing.
