Easy Chicken Stir Fry

- 1 tablespoon vegetable oil
- 6 ounces chicken breasts, sliced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 2 tablespoons oyster sauce
- 1 1⁄2 tablespoons low sodium soy sauce
- 1⁄2 tablespoon water
- 1 teaspoon sugar
- hot sauce, to taste (Sriracha)
- cooked rice
directions
- Heat half the vegetable oil over high heat in a wok or cast iron skillet.
- Add chicken and cook until lightly browned, about one minute.
- Remove chicken and add the remaining oil. Add the peppers and zucchini and cook until softened and browned, about five minutes.
- Add oyster sauce, soy sauce, water, sugar and as much sriracha (or hot sauce) as you like!
- Add the chicken and cook until sauce thickens, about two minutes.
- Serve over a bed of cooked rice.
