  • Heat half the vegetable oil over high heat in a wok or cast iron skillet.
  • Add chicken and cook until lightly browned, about one minute.
  • Remove chicken and add the remaining oil. Add the peppers and zucchini and cook until softened and browned, about five minutes.
  • Add oyster sauce, soy sauce, water, sugar and as much sriracha (or hot sauce) as you like!
  • Add the chicken and cook until sauce thickens, about two minutes.
  • Serve over a bed of cooked rice.
