Easy Chicken Curry

"This is seriously the easiest chicken curry recipe ever! Delicious and filling. Can use any chutney found at your grocery store, usually found by the condiments or in the international foods aisle."

  • In nonstick skillet or wok, heat olive oil over medium heat. Add onion and chicken breast and cook, stirring ocassionally, until chicken is almost cooked through.
  • Add tomato juice, red wine, chutney, and salt. Simmer for 10 minutes. Serve with rice.

  1. For a farm girl and her family who can't tolerate very spicy foods, this was an amazing curry! I doubled the sauce because we enjoy it so much, added a bag of frozen peas and a sweet potato. Such a good, fast, tasty meal! Can together in 1/2 an hour and just enough heat to make it interesting. Also, I highly appreciated the fact that common ingredients could be used; I hate buying expensive single-use spices! Made for Spring PAC 2010.

I can't plan meals in advance, we never know what we will be in the mood for. I end up going to the grocery store a few times a week, which I love to do anyway. I love making anything from scratch and feel bad for people who never deviate from their 'heat and serve' lifestyle.
