Easy Cheesy Spaghetti Squash

- 1 spaghetti squash
- 1⁄4 cup lowfat parmesan cheese (just the shaker kind is fine)
- 1⁄2 cup mozzarella cheese, grated (you can substitute for cheddar, farmer's, colby etc.... any kind of cheese you want!)
- 1⁄3 cup fresh parsley, chopped (1/8 cup if using the dried stuff)
- 1 cup salsa (mild, hot, whatever. I have even substituted this with spaghetti sauce!)
directions
- Cut squash in half lengthwise.
- Remove and discard seeds (or keep them to plant for next year).
- Steam squash, cut side up for 10-15 minutes, or until softened.
- Pre heat oven to 400 degrees F.
- Remove squash from steamer and place on a baking sheet.
- With a fork, scrape the insides of the squash to form the spaghetti strands. (This will be very easy if your squash is cooked enough).
- Top each squash half with the remaining ingredients ending with the mozzarella (or whatever type you used) cheese on top to melt.
- Bake for 10-15 minutes or until cheese is all melted.
- Remove from oven and give it another quick stir to mix the cheese into the rest of the filling.
- *There is no need to remove the insides for serving. We just eat the squash right out of the shell!

I tried to make this as posted, but couldn't figure out where the salsa or spaghetti sauce figured into the recipe. I ended up leaving it out and just putting the cheeses on top of the squash. I stirred it in, but the recipe was definitely missing something. If I made again, I would add olive oil to the spaghetti squash strands, and stir halfway through baking. I would also add some garlic, salt, pepper, and maybe some italian seasonings or red pepper flakes. The recipe was just a little flat for me.

I'm a mom and I love to cook. Started cooking when I was 20, and found I love to do it! I love to experiment with new stuff all the time, and I hate prepackaged foods and recipes that use them, so I always try to figure out the ingredients on my own to copy a recipe. I just don't think that opening a can of baked beans and adding something to it makes for homemade beans!!)
My husband had a heart attack last year at the age of 39! So now, we try to eat a lot healthier. I am always looking for ways to get more veggies into him. In my recipes, I never add salt, but I post it here cuz I know most people still like the taste. It takes a while, but you get over it when you cut it out of your cooking. We don't even have a salt shaker anymore. Poor guests!
