This is such an easy recipe for Alfredo sauce and way healthier than the original!
- 2 tablespoons butter
- 4 ounces low-fat cream cheese
- 1 garlic clove, minced
- 1 cup 1% low-fat milk
- 1 cup fresh parmesan cheese
- ground black pepper
- 1 dash nutmeg
- Melt butter over med. heat and saute garlic for 1 minute. Add cream cheese and stir until melted. Add milk slowly while whisking until smooth. Add parmesan cheese, whisk until melted. Add nutmeg and ground pepper. Stir. Pour over approximately 1/2 lb pasta, cooked.
This sauce is fast and tasty. It is also flexible; I have made it when short on parmesan cheese, and also without nutmeg. My family enjoys the sauce on pasta and as the sauce for a chicken and spinach pizza.
My husband and I tried this for the first time and it was absolutely delicious! We are not fans of nutmeg, so we left it out. We used 0% milk and regular parmesan cheese. The consistency was creamy, it made plenty of sauce, and we had just enough left over for one lunch for tomorrow. Definitely will make it again!!!
