- 1 (400 g) can of any white beans (or Chickpeas)
- 1 cup stock (Vegetable or Chicken)
- 2 cups water
- 1 cup onion (chopped finely)
- 1 cup carrot (diced)
- 1⁄2 - 1 tablespoon lemon juice
- 1⁄2 teaspoon black pepper
directions
- Combine beans, stock, water, onion and carrot and cook for 15minutes.
- Add Black Pepper and Lemon Juice and cook a further 15-20minutes.
- Serve.
