This was very simple and quite tasty. I also added more garlic & some flavored tomatoes I had on hand, and it came out great.
This was a great way to use some of the bounty of mid-summer vegetables. I made a few alterations: - Threw in a couple of redskin potatoes - Used vegetable broth powder instead of chicken boullion - Used store brand onion soup mix - Added a bit of minced garlic, thyme, and pepper The end result was delicious!
Very good, low-fat soup! I used white onion instead of green onion and added a few cloves of garlic. Thanx for posting this. I'll be making this soup again.
