Easy Breezy Homemade Veggie Soup

"This is a very simple recipe that ANYBODY can make. It is very filling and very satisfying! It is a large recipe, but I usually freeze some for another meal. It freezes well. I devised this recipe so it wouldn't take as long to make vegetable soup."

  • In large Dutch oven add veggie juice, stock and water and bouillon cubes. Bring to boil and cook for 15 minutes.
  • Then add lentils and cook for 10 minutes on medium heat.
  • Add potatoes, onion and cabbage (if using).
  • Cook for 10 minutes then add the frozen mixed veggies.
  • Cook until desired tenderness in vegetables.
  • Serve with crusty bread or homemade biscuits and a green salad.
  • This recipe is absolutely delish!

My husband and I recently moved to Tacoma,Wa. from North Carolina. He is origionally from Seattle and I am disabled. So I enjoy traveling around and seeing new sights and finding new things. We love to go to the infamous Pike Place market in Seattle. Finding new foods is like exploring to me. I am passionate about it. I am diabetic with lupus and arthrits so learning how to alter recipes or creating new recipes is an adventure to me. I don't understand when other people wont try new things. The texture, taste, and aroma of new foods is exciting to me. I collect all kinds of cookbooks, too on my adventures.
