This comes from the WSU Extension office. Try whole wheat tortillas and some sliced tomatoes. Add slices of avocado or for a burrito high in vitamin C, and A, make it with bell peppers and spinach.
- Place 1 cup of rice in each tortilla.
- Add 1/4 of the cheese to each one.
- Roll and eat.
- Note: Leftover rice can be used. Veggies can be raw or sauteed depending on what you choose. Tortillas can be warmed if desired.
