Great recipe for when you need bean soup NOW!
- 6 strips bacon, diced
- 1 medium onion, diced
- 2 stalks celery, diced
- 3 cups great northern beans, canned
- 3 cups chicken broth
- fresh ground pepper
- Brown the diced bacon in a heavy pot.
- Add the onion and celery, cooking until just soft.
- Add the beans and chicken broth.
- Simmer for 20 minutes.
- Add pepper to taste.
- Serve warm.
This tastes a lot better than a recipe so easy should taste! All I added was 1 t minced garlic and 1/2 t thyme. Let the soup simmer, then served it with slices of french bread, and cherry tomato salad. Great supper!!

This was so easy to make. I made this for my 3 yr old. He is so picky yet loves any kind of beans. He ate almost all of his soup, my 11 yr doesn't care for soup he cleaned his bowl. My husband ate all of his and never complained I totally forgot he hates bean soup, when he was a kid his dad made him eat a lot of bean soup and he doesn't care for it. Great recipe!
