This is an excellent way to use up that leftover roast beef! And seeing that there are only two of us, I am always on the lookout for ideas. This was soooo easy to do (I rarely cook in the microwave!) and the flavor was tangy and delicious. I added a couple tablespoons of chili sauce (I was low on ketchup) but otherwise made exactly as posted. Also, I didn't have any crusty rolls, so I served the beef over rice - yum! Thanks, Kit!!

We thought this was good, but only if you don't think of it as BBQ!! It is tasty, but not what I think of as a BBQ sandwich! Thanks for sharing! :O)

YUM!!! Who would have thought that boring leftovers could taste so good!! The flavour of the sauce works so well with the beef and the cheddar balances the sweetness of the sauce. I halved the mixture and reduced the microwave cooking time to 2 mins for sauce & the same for the beef. I plan to make another beef roast so that I can have more leftovers to make this again!

A nice recipe that tastes very much like mild sloppy joes...It was an added bonus that it could be done quickly in the microwave...Served it for lunch with potato chips and a big old sour dill...delicious!
