This was absolutely amazing!!! But, can I make the batter the night before and keep in the fridge and then bake in the morning? Will the batter keep well?

I made two different recipes and this one was my families favorite. Very moist and the cinnamon and vanilla give it a nice boost of flavor.

This was very easy! I made muffins, instead of a loaf or cake, and baked them for 20 minutes. I only had 4 bananas, which amounted to 1 and a half cups, so I used a half a cup of applesauce too. I also used walnuts, instead of pecans. They came out great. Thank you for the recipe!

1 hour was WAY too long in my oven :( 30 minutes would have been ideal, but I didn't check them until 45 minutes so they are a little bit dark. Both of my loaves are cracked across the top (deeply), so I'm not sure they will hold together once cooled. The good news is that the flavor is DELICIOUS! And the texture is perfect (on the inside-mine were too dark on the outside)I doubled the vanilla and cinnamon, and I added walnuts instead of pecans. I'll make this again, but cook for less time. Thanks!

This was super easy and the texture is nice, but we did find it a bit bland, i'll try it again and double the vanilla and cinnamon, and add more bananas. I loved that it took only one bowl and about 8 minutes to whip together though!

this banana bread is impossible to mess up and so so easy. can add or omit whatever you'd like--i used less sugar the 2nd time around (2 cups) and added cinnamon chips...yum.

Very easy and very good banana bread. I have several recipes for banana nut bread but none are as easy and the taste of this definitely competes with those longer, harder recipes. Thanks for posting! Also, freezes really really well -- five stars!

My oven cooks a little on the hot side so it only took 50 minutes for mine to bake. The whole family loved it. Thanks for sharing! *Since the last time I made this recipe I have found out that my son is allergic to eggs and nuts. I just made today and used Ener-G Egg Replacer and it worked great in this recipe. Everything binded together very well and was also very moist. It took 6 teas. of Ener-G Egg Replacer mixed with 8 tbls of warm water. I obviously didn't add the pecans this time either.

I love love love this recipe, people have offered payment for me making this for them.. I use walnuts instead of the pecans and add a little extra banana to make it deliciously moist.. Lisa Charlotte NC

I LOVED this bread. I halved the recipe and made 1 loaf. With 3 smaller bananas. It took about 1hr 5min to cook. I let it sit for awhile after so it probably cooked a little more just sitting there. I tried making with Splenda NoCal Sweetner & applesauce instead of oil. It came out pretty bad. I had to throw out the loaf.
