Easy Baked Jo Jo Potatoes

ingredients
- 3 large baking potatoes
- 1⁄4 cup extra light olive oil
- 1⁄4 cup flour
- 1⁄4 cup parmesan cheese
- 1⁄2 teaspoon ground black pepper
- 1⁄2 teaspoon onion salt
- 1⁄2 teaspoon garlic powder
- ground cayenne pepper (optional) or salt (optional)
directions
- Peel potatoes and place in cold water for at least 1 hour. Slice Potatoes into spears. Place on a heavy duty cookie sheet, poor Olive Oil over potatoes and toss. In a pie pan combine remaining ingredients (except hot salt) Press each potato wedge in flour Mixture. Place back on cookie sheet (Balance on skin part if possible) Sprinkle with Hot Salt now if desired. Bake in a 400 degree oven for approx 45 minutes, or golden brown. Use spatula to remove from pan and serve with Ranch dressing and ketchup/salsa.

I prepared this recipe using a combination of yukon gold and klondike rose potatoes since that's what I had on hand. The potatoes were allowed to sit in very cold water while the rest of the ingredients were assembled then dried with some paper towelling before proceeding with the recipe as written. I finely grated a piece of parmesan cheese and used the cayenne option. Dd and I loved the end result. Our potatoes were very crispy on the outside and soft inside. They weren't floury tasting at all. Made for PAC Spring '09.

I'm sorry to say these weren't my fave...The flour taste was too pronounced, and they weren't crispy at all. I followed the recipe as posted, but think they need a 'batter' instead; I liked the flavor, and maybe a higher oven temp would have helped also. I may try them again, but would need to make some changes. Made for PAC Spring '09.
