I wanted some "real" baked beans for dinner, but didn't want the leftovers from making my usual recipe since I was only cooking for 2. I played around and came up with this tasty scaled down version perfect us. This is even easy enough for busy weeknights.

I am a snob, who almost never makes anything out of a can, but baked beans are a lot of trouble for 2 people! Using Bush's veggie beans, this was comparable to my homemade baked beans, and with the time and work it saved me, I may never make them the old way again! I doubled the onion and put 2 slices of bacon on top, baked for about a half hour. Thanks!
- 1 (15 ounce) can pork and beans
- 1 tablespoon ketchup
- 1 tablespoon brown sugar
- 1 teaspoon Dijon mustard
- 1⁄8 teaspoon dried onion flakes (optional)
