A friend gave me a recipe that required roasting in the oven, but I could never get it right. Instead I experimented with it in the crockpot and it is SOOOO good! Easy, hearty, cheap, and comfort food at its best!

Cook according to directions. This makes a great do ahead meal; cook overnight for breakfast and brunch,or all day for dinner. Added the additional seasonings suggested by KB. Added 9 additional scrambled eggs for a heartier higher protein meal. Use a durable slotted spoon to serve individuals; also served with optional grated sharp cheddar & green onions. Yum!
- 2 lbs sweet Italian sausage
- 2 -3 lbs red potatoes
- 24 ounces frozen stir fry vegetables, pepper and onion
- 2 cups water
- 2 teaspoons dried Italian seasoning
- 1 teaspoon sage
