A friend gave me a recipe that required roasting in the oven, but I could never get it right. Instead I experimented with it in the crockpot and it is SOOOO good! Easy, hearty, cheap, and comfort food at its best!
- 2 lbs sweet Italian sausage
- 2 -3 lbs red potatoes
- 24 ounces frozen stir fry vegetables, pepper and onion
- 2 cups water
- 2 teaspoons dried Italian seasoning
- 1 teaspoon sage
- Cut sausages and potatoes into bite sized chunks.
- Dump all ingredients into large crock pot.
- Cook on low 6 hours.
- Drain liquid and serve.
Love the fact that this is a quick and easy, throw together meal for busy days. I first put baby potatoes that required very little cutting in the bottom of my crock pot. I then chopped up a medium onion and two red bell peppers in place of the frozen vegetables. I used the Italian sausage I had on hand which was 1 package of Hot and 1 package of Mild turkey Italian sausage. I enjoyed the recipe as is however; all four of my kids told me they thought something was missing. You have given me a great recipe to play with. Thanks for posting. Made and reviewed for Spring PAC 2012.
