The epsom salt helps the apricots set.
- Cook all but salt for 5 minutes, stirring frequently.
- Take off heat and stir in salt.
- Stir well and bottle.
This recipe may be low fat, but way too much sugar!! I used about two cups and it was still too sweet.
I added some lemon juice in hopes to take some of the sweetness out. I didn't have to use the salt as it was already thick. But, still a very easy jam. (I added some fresh ginger...yummy!)
