A wonderful meat substitute for those removing/eating less red meat from their diet. It really is delicious, seriously!!!
- 4 cups Special K cereal
- 8 ounces cottage cheese
- 1 (1 1/2 ounce) package prepared sweet-and-sour mix
- 1 chopped scallion
- 4 ounces crushed walnuts
- 4 eggs, beaten
- 4 ounces margarine
- I use Knorr Hot & Sour recipe mix.
- Mix all the ingredients together.
- Place in a greased ovenproof dish at 375ºF for 1 hour or until brown and firm on top.
