Easy Almond Roca Toffee

  • Line a cookie sheet with foil and spray it with non-stick cooking spray.
  • Place almonds in a single layer on cookie sheet.
  • Cook butter, sugar, water, vanilla and salt in a heavy saucepan over high heat, stirring mixture constantly, 15-18 minutes or until a candy thermometer registers 310°F.
  • Remove from heat and immediately pour over almonds (do not scrape the pan).
  • Sprinkle immediately with chocolate morsels and spread evenly to 1/2 inch from sides.
  • Sprinkle with ground walnuts.
  • Let stand until firm.
  • Break into small pieces and store in an airtight container.
  • (The toffee mixture will not coat the entire baking sheet).

  1. I loved this! It tasted just like what you would purchase in a specialty store. I had to make it twice though, as the first batch I burned. The second time a took the advice of others and it took exactly 10 min from the moment it began to boil. I will make this again for sure!

  3. Many, many years ago, a co-worker would bring a huge batch of Almond Roca to share w/everyone at work during Christmas. It was delicious, she told me it was easy, so naturally I asked for the recipe... which I've since, sadly, lost. I've thankfully recovered it thanks to Pvt Amys Mom's posting here. This recipe is just as easy, and just as equally delicious!! ...and it produces exactly the same terrific reaction from everyone that tastes it and unabashedly loves it, especially yours truly. It took me a while to post this review, but I'm now going on my third year of sharing my own Christmas batch of Almond Roca w/everyone at work, and getting lots of smiles & Thank Yous from everyone who has a bite. Thanks for sharing this great recipe!
     
  4. A girl from work always made almond roca for the holidays, and to me it was like crack. I thought it would be difficult to make and i wouldn't be able to find a recipe as good as hers. This recipe is perfect and has the taste and amazing texture i was looking for. I am glad i came across this because now i make it all the time! One hint...use a metal or wooden spoon...first time i made it with a plastic one and by the time i was done stirring only half the spoon came out because it melted! haha
     
  5. WOW!!! I could leave it at that...but I'll try to be more helpful. I don't have a candy thermometer so I had to guess on the temperature. I cooked it for only about 8-10 minutes but it came out perfect! I can't believe how delicious this was. ANd, I really cant believe how much money I have spent on ALmond ROca when this was soooo easy! Thanks a million for this A+++++ recipe Pvt Amy!!!
