Easy 20 Minute Hot Sausage and Potato Soup

"There is no substitute for real homemade soup, or is there? As it turns out, this is a fast, easy and super tasty bowl of soup. I came up with this idea when I decided to "change up" my regular 20 minute potato soup - we were very happy with the results. Our D&D group devours this stuff! You can use milder sausage if you like, but the hot stuff sure makes it pop!"

  • Add sausage to a hot pan and break it up to crumble it as you cook it.
  • When the sausage is no longer pink, add the hash browns, seasonings and onion flakes. Cook the hash browns until they are slightly soft.
  • Wisk some of the chicken broth with the gravy mix in a bowl and slowly add to the pot.
  • Add the remaining chicken broth to the pot.
  • Mix gently and bring to a rolling boil over med-high heat.
  • Lower the heat to simmer and cook for an additional 15-20 minutes, or until hot all the way through.

  1. This was easy to make and very good. It took a little longer than expected to make but, it was very tasty and everybody enjoyed it.
     
  2. I don't know if easy even begins to describe how simple this is! I quartered the recipe since DBF was the only one eating (although I snagged a ladleful so that I could do a full review). The only thing I really measured was the broth, using 1 1/2 cups instead of the carton+can. I was initially a little leery of the gravy mix, but it definitely made the soup better! I used refrigerated diced potatoes with onions and Italian sausage since that is what I had on hand. I think my sausage could have been hotter (we like things really hot!) so next time I think I will use a spicier blend. All-in-all, a very easy pot of soup that hit the spot!
