Made this for (what else?) Easter, and it was a hit. I added more rice, almost doubling it to a full cup and also more than a 1/3 cup of pine nuts. It still set perfectly and was both beautiful and delicious.

I've made this three times now and it is heavenly. Sort of like a rice pudding in phyllo, but not enough rice to call it that. I took it to work and everyone thought it rather odd but delicious. It is very easy to make. Don't leave the orange zest out, it is essential for the depth of flavor.
