    This recipe was something I fixed as a 'cop out' salad for a fancy dinner party I was having. Turned out to be one of the biggest hits of the night!! Use whatever vegetables you like. Cook time is marinade time.

      I can vouch for this being REALLY GOOD! As a matter of fact, I had this last week alongwith my Sub sandwich and I "loved it". This was the first time I was trying Italian dressing over fresh veggies, and, it was MARVELLOUS!!! I had carrots, cauliflower, celery{my favourite}, onion, green bell pepper, a little spinach and lots of fresh lettuce!! Oh it was just unbelievable and I am now pretty much addicted to this salad;){Not to mention - to the dressing!} :-))

      Very good and simple salad. I didn't have any summer squash on hand, and grated my carrots instead of slicing thin. I used red onion for more color in the salad. This was a nice side dish at a casual hamburger and hot dog cookout with friends.

      I think the veggies you use can make a big difference in the taste. It was a good, quick, and easy salad though.
