One of my mother's favorites for when she was rushed and wanted a vegetable side dish that was quick, simple and tasty. She didn't measure the soy sauce, just sprinkled it with the plastic "sprinkling top" (I don't know what else to call it) on the bottle, so I'm just guessing at the amount. These days, I use light (lower-sodium) soy sauce. If you like, jazz it up with the herb of your choice, but I like it just as is. (Occasionally I sprinkle with my favorite herb thyme.)
- Heat oil in a skillet and saute the onion.
- Add zucchini in a single layer atop the onion and sprinkle with soy sauce.
- Stir-fry approximately 5 minutes, or until zucchini is cooked to your liking.
- Serve warm.
This was a quick and easy way to make zucchini. I also think it needs a bit more to it. Sesame oil? Red pepper flakes? Sesame seeds? It would be easy to spiff up. My husband really liked it. Made for 1-2-3 hit wonders.
This was absolutely GREAT - I added a little garlic and served this with pork chops. It was a big hit! Will definitely make again.
So easy and low cal vegetable dish! I made it as directed and I liked it, but I felt that it needed something more. Some fresh peppers would be a nice addittion as I read in a previous review. I'll try it that way next time. Thanks echo for sharing!
