This was simple and fabulous! Ended up using 500g of chicken thigh fillets, added some tomato paste and some dried thyme and rosemary - apart from that, stuck to the recipe and managed to get 7 servings out of it. Served it with mashed swede and cauliflower but it would work perfectly with simple mashed potato or just with some nice bread - delicious and definitely a keeper for my recipe book - thanks for posting!

  1. Dump everything in a large pan.
  2. Cook for about an hour or so, if too dry add a little water.
  3. Add salt and pepper to taste. That's it!
