Easiest Broccoli Rice Casserole

"I got this recipe from someone I worked with 20 years ago...Her name was Ruth and she was such a sweetheart! Lost track of her when I left Ohio and moved to Indiana...Anyway, this is so easy that my kids can help me make this and they love it..."

  • Mix all ingredients except shredded cheddar cheese in a 2 quart casserole dish.
  • Bake in a preheated 350 degree oven for 35-40 minutes.
  • Take out and stir.
  • Sprinkle shredded cheese on top and bake for an additional 10 minutes.

  1. I was going to enter this recipe and found one that this one is the same recipe I've been using. I doubled this recipe and it fits nicely into a 3 quart glass dish ( see the picture I posted)

  3. My husband had been craving broccoli and rice. Decided to try this version and I'm glad I did! He probably ate 3 servings just by himself! We enjoyed the addition of the mushrooms (we'd never had broccoli & rice casserole with mushrooms added before). I followed the directions other than I did saute my onion in the butter called for. The only thing I would change next time would be to add some salt and pepper. Thanks, I will be making this again!

I prepared this casserole last evening for my wife's supper and I could tell right off that I had hit a home run -- those eyebrows shot up when she tasted it. It's amazing that such simple ingredients, strategically combined, can turn out so very good. Thanks, Stacky, for yet another of your super recipes.   5. Yes this recipe is outstanding to me and my family. It is simple and so so good! I also doubled the recipe and can't wait for lunch to have some more, I think everything gets even better the next day so I am very much looking foreward to this. I thought I had an onion but I didn't so omited that, otherwise followed the recipe exactly and it was a definate crowd pleaser in this home.

My name is Stacy, and I'm a single Mom who works full-time with 4 kids ranging from ages 9 to 21, a brand new granddaughter named Faith, and a cat named Pubert (we call him Pube) who is also my kid... I've saved a lifetime of recipes and learned so much about cooking and ingredients that I actually feel proud of my cooking. I bet my Mom looks down on me with pride every time I cook a new recipe from RecipeZaar, and I bet my Dad cracks up every time he sees me photographing what I've cooked! My daughters have actually gotten into the act, too, and are quite versed in searching for recipes and answers here on Zaar. Makes me proud to be their Mom. RecipeZaar isn't just a "website."
