Oh this is so refreshing, when it becomes chilled. I can't stop eating it. It's crunchy and chewy and healthy.
- 2 cups cooked short-grain brown rice, cooled
- fresh dill, gently plucked
- fresh parsley, gently plucked
- 1 raw fresh ear of corn, scaled
- 1 carrot, finely chopped
- 1 large scallion, chopped
- 2 lemons, juice of
- salt and pepper
- all purpose seasoning, I use Simply Organics
- olive oil
- Mix all ingredients in a bowl. Refrigerate till serving.
