Dutch Bread Dish With Raisins

The is from "The Art of Dutch Cooking". I haven't made it yet. It sounds unique in that the bread is mashed, not used in slices.

  • 18 slices stale bread
  • 2 cups milk, warmed
  • 2 egg yolks
  • 13 cup sugar
  • 3 ounces raisins
  • 3 ounces candied orange peel
  • 12 cup brandy
  • 2 teaspoons cinnamon
  • 2 egg whites, beaten stiff
  • 1 tablespoon butter


  1. Soften bread in warm milk and mash it fine. Add egg yolks, sugar, raisins, peel, brandy and cinnamon. Mix well.
  2. Fold in beaten egg whites.
  3. Pour into buttered ovenproof dish. Dot with butter. Bake at 325 for 1/2 hour.
