Durian - the King of Fruit! From Glenn Tankard's "Tropical Fruit"
- Scoop out the durian flesh from the rind and place in a saucepan.
- Stir slowly over a medium heat, removing the seeds with a spoon until only the pulp remains.
- Add the sugar and stir well.
- Continue stirring until the mixture coagulates.
- Remove from heat and shape into cakes.
