Durian - the King of Fruit! From Glenn Tankard's "Tropical Fruit"


  1. Scoop out the durian flesh from the rind and place in a saucepan.
  2. Stir slowly over a medium heat, removing the seeds with a spoon until only the pulp remains.
  3. Add the sugar and stir well.
  4. Continue stirring until the mixture coagulates.
  5. Remove from heat and shape into cakes.
