Cherry Coconut Dump Cake

"This was demonstrated at my monthly mom's group. It is quick to put together because you just "dump" everything in the pan and bake it, no mixing required."

  • Preheat oven to 350 degrees (325 degrees for glass pan).
  • In a 9x13 pan, dump in cherry pie filling if using add almond extract and stir together.
  • Empty entire can of crushed pineapple on top of cherries (no need to stir).
  • Sprinkle cake mix evenly over top of fruit layers, do not stir.
  • Dot with ¼ cup cut up butter.
  • Pour ½ cup melted butter over top of cake mix.
  • If using, sprinkle coconut and pecans over top of cake.
  • Bake for one hour or until tester comes out clean.

This recipe I will keep, it would be great to make at a moments notice for last minute company. Thanks for the great recipe. Made for PAC March 2009.
     
  3. I made this again today. It's a favorite at our house. I did not have crushed pineapple, so used chunk pineapple, and think I now prefer it. I hate coconut, so did not miss it in the least! I used 2 sticks of margarine, and cut each stick into eights, laying them on top of the cake. Then added about a half cup of walnuts over the top. So good!
     
  4. My daughter, age 11, likes to bake. So I gave her this recipe and had her make it. It turned out great! So flavorful!
     
  5. This was fabulous. I used my own stewed fruit - apples and pears - and a tin of mangoes instead of pineapple and cherries. The result was excellent proving the immense versatility of this recipe and the addition of the almond too was just brilliant.

  2. OH MY GOODNESS!!! This is simply heavenly. I have no words to describe sinful pleasure of eating this dessert. I only wish I could give it 10 stars. I did substitute coconut extract for the almond extract & I added an extra can of cherries to the mixture.

I am also&nbsp;married to my best friend, Jeff and have been since April 2005.&nbsp; I love cooking, hate cleaning and will do whatever I can to get out of it!&nbsp;&nbsp;I&nbsp;love grilling and baking.&nbsp;&nbsp;I do most of the grilling at my house, and bake for almost a week straight at Christmas time!&nbsp; I can make or will attempt just about anything,&nbsp;though I rarely make&nbsp;brownies, my husband's are the best!&nbsp; Homemade breads are not my friend, so I am always working on bread baking.</strong></span></p> <p><span><strong>As for recipe ideas (besides zaar) Cooking Light Cookbooks are my favorites.&nbsp; I love to make new meals and try new things; it is hard though because my husband is picky when it comes to veggies (and hates seafood); If it were up to him we would have baked-bread crumb chicken and white rice at least one meal a day!&nbsp; Over the past couple years with zaar, I have found tons of new recipes&nbsp;my family&nbsp;normally wouldn&rsquo;t eat&nbsp;but have been happily surprised with new favorites.</strong></span></p> <p><span><strong>I&nbsp;love to join in&nbsp;all of the tag games; I haven't been as present as I would like, but as soon as my Jeff is back from working in Ohio I will be back in full tagging mode! </strong></span></p> <p><span><strong>Cooking is my hobby and passion, I always like to host the family get togethers and volunteer for the potluck dishes.&nbsp; Most of all though&nbsp;are my kids; being home all day with them is fun and challenging, but I wouldn&rsquo;t trade it for any salary!!</strong></span></p>
