Dried Cranberry and Apple Turkey Stuffing

A recipe of my girlfriends, made at her house for a Christmas dinner a few years back...an excellent recipe for a stuffing, that is prepared to cook inside the turkey. Note cooking time depends on how long the turkey is cooked, I imagine that you could bake this outside the turkey also too. This recipe can be doubled if desired.

  1. In a frypan, melt butter, saute onion and garlic until soft (not brown), about 5 minutes.
  2. Add in the bread cubes and herbs, stirring to combine.
  3. Stir in apples, wine, stock, pecans, cranberries and parsley (if the mixture seems too dry add in just a bit more stock, not too much!).
  4. Cool to almost room temperature.
  5. Add in egg or egg whites.
  6. Season well with salt and lots of pepper.
  7. Stuff into the turkey.

Excellent stuffing! I had to drop pecans in favor of golden raisins to accommodate an allergy. Even with the substitution, it was wonderful

I absolutely loved this recipe even after having to change it a little bit. I had no pecans so I doubled the amount of cranberries used. I also had no fresh parsley and used 2 tbsp of dried parsley and increased the amount of bread a little to offset the extra moist in the cranberries. All in all definitely worth repeating!

This was excellent stuffing, but I ended up having to use 5 cups of cubed bread and it was still too moist. I left out the pecans and used chicken broth instead of wine. I will make this again and again, but will definitely use about 3 times as much bread as listed. Thanks for sharing this...it will be a new tradition in our house. *editing to add that original recipe listed 2 cups of bread cubes, but has since been corrected...thanks!! ;)*
