This is a light, creamy, lemony dressing, perfect for salads like spinach with hard boiled eggs, bacon, and mushrooms. Use it as you would any oil and vinegar dressing, too!
- 1⁄2 cup olive oil
- 2 tablespoons fresh lemon juice
- 2 tablespoons sour cream ((regular or light))
- 1 clove garlic, crushed
- 1⁄2 teaspoon salt
- Whisk or shake together all ingredients.
- Serve over salad.
This is a very nice dressing - very springy in flavors. It did go perfectly with your suggestion of spinach, mushrooms, bacon and eggs. Since we like our dressing just a bit more acidic and the oil was a bit heavy for us, I'll make it again but use 1/3 cup oil and just a splash more lemon juice. Thanks Norhtwest Lynnie.
