Dreamy Strawberry Rhubarb Squares

"This was inspired by another recipe on this site. They have a perfect balance of strawberry and rhubarb flavors with a vanilla shortbread crust. It is very easy to make and fairly quick. Great for entertaining, or just eating whenever."

ingredients

• Crust

• 1 cup flour
• 1⁄3 cup butter
• 1⁄3 cup powdered sugar (icing)
• 1 teaspoon vanilla

• Filling

• 1 1⁄2 cups rhubarb, finely chopped
• 1 1⁄2 cups sliced strawberries
• 2 eggs, beaten
• 1⁄4 cup flour
• 1⁄2 - 3⁄4 cup white sugar, to taste
• 1 teaspoon vanilla

directions

1. Preheat oven to 350 F.
2. Grease an 11 by 8 by 2" glass baking pan.
3. Mix flour, icing sugar, and vanilla.
4. Cut in butter to make fine crumbs.
5. Press into the greased pan and bake for 12 minutes or until slightly set.
6. Meanwhile, combine all other ingredients in a bowl.
7. After crust is cool, spread filling on and bake for another 35-40 minutes until toothpick comes out clean.
8. Cool before cutting and serving, it tastes bests chilled in the fridge . Good with whipped cream or ice cream also. Enjoy!
