Dreamy Strawberry Rhubarb Squares

"This was inspired by another recipe on this site. They have a perfect balance of strawberry and rhubarb flavors with a vanilla shortbread crust. It is very easy to make and fairly quick. Great for entertaining, or just eating whenever."

  • Preheat oven to 350 F.
  • Grease an 11 by 8 by 2" glass baking pan.
  • Mix flour, icing sugar, and vanilla.
  • Cut in butter to make fine crumbs.
  • Press into the greased pan and bake for 12 minutes or until slightly set.
  • Meanwhile, combine all other ingredients in a bowl.
  • After crust is cool, spread filling on and bake for another 35-40 minutes until toothpick comes out clean.
  • Cool before cutting and serving, it tastes bests chilled in the fridge . Good with whipped cream or ice cream also. Enjoy!
