I must have dreamed up this recipe but here it is! So yummy and healthy too! I love it over a warm corn muffin and a bit of cheddar cheese sprinkled on top.

  1. In a big pot combine all ingredients and bring to a boil over medium heat. Season to taste. Simmer on low for 30 minutes to an hour.
