A very cool dish on hot days. It is good to serve with almost any dish.
- 2 large cucumbers (slice in 1/4 inch slices)
- 1⁄2 small onion (diced)
- 1 cup mayonnaise
- 1⁄4 teaspoon sugar
- salt and pepper
- Peel and slice cucumbers.
- Peel and dice onion.
- Mix cucumbers, onion, mayo, sugar, salt and pepper.
- Let chill for at least 2 hours then serve.
I make this all the time in the summer. I leave out the onion though. Very good.
Good one actually and I omitted the sugar and used fresh lime juice to add that ZING!!
