Dr. Pepper Cherry Marshmallow Cake

  • 2 (8 ounce) cans dark sweet cherries, pitted, drained, reserving syrup
  • JELLO MIXTURE

  • 34 cup reserved cherry syrup
  • 14 cup Dr. Pepper cola
  • 1 (3 ounce) package cherry Jell-O
  • 18 teaspoon almond extract
  • BATTER MIXTURE

  • 1 (18 1/4 ounce) package yellow cake mix
  • 1 (3 ounce) package cherry Jell-O
  • 12 cup vegetable oil
  • 34 cup Dr. Pepper cola
  • 4 eggs
  • 2 cups miniature marshmallows

  • Arrange cherries evenly on bottom of a greased 9 x 13 pan.
  • Preheat oven to 350°F
  • In a small saucepan, combine the cherry syrup, 1 package of cherry Jello and 1/4 cup Dr. Pepper; gently heat until Jello is dissolved.
  • Add almond extract and cool slightly.
  • In a large mixing bowl, combine yellow cake mix, 1 pack cherry Jello, oil, eggs and 3/4 cup Dr. Pepper. Beat on high for 3-4 minutes.
  • Pour cooled Jello mixture over cherries in pan.
  • Sprinkle evenly with the miniature marshmallows and then carefully and evenly spoon the batter mix over the marshmallows.
  • Bake for 40-45 minutes. Cool on rack for 45 minutes. Chill 3-4 hours.

  1. I made this cake but it did not look anything like the photo. The cake, due to the jello, was pink/red and the cherries/jello mixture baked to a dark thin layer on the bottom. When I made my first cut I got a bit upset. I thought it scorched. In reality it was just a dark gelatinous layer from the dark cherries. But it has a great texture and taste I will make this again.
     
  2. Surprisingly yummy cake. The marshmallows just evaporate into the cake mix making it moist and a little chewy. Lots of yummy cherry flavor. Thanks for posting!
     
  3. It was very easy and pretty good. It didn't taste like Dr Pepper at all and that's what I was looking for. I would make this again though, Thanks for sharing.
